Players are lined up and ready for the big game. Each one brings their talents to make a winning team. Flour, sugar, and cocoa are called in first to get the foundation play started. Butter cuts in to pull them together for a strong base. Heat solidifies the first play and it’s time for the next. Cream cheese and condensed milk make a beater play and call in eggs and vanilla for assistance. They cover the foundation however leave an open end. It’s back in the hands of flour’s special team and pecans are brought into the mix. The field is covered and more heat brings the victory. Chocolate Streusel Bars are a clear winner for any occasion.

Cooking and baking are my sports. Not the kind of competition on television shows, it is more of a fun game of constantly improving and learning new things. It’s the thrill of victory when I make a new dish that a selective eater thoroughly enjoys. It’s discovering new techniques like rubbing citrus zest into sugar to bring out the flavor as I did with a tangerine yogurt cake. (I definitely scored on that one). It’s also making something my friends enjoy eating while watching sports.

Chocolate Streusel Bars are a great game day treat. A chocolate crust is covered with a layer of sweetened cream cheese and topped with more chocolate in the form of pecan streusel. They are creamy, nutty, chocolate-y bars of deliciousness.

Chocolate Streusel Bars

A recipe for Chocolate Streusel Bars. The bars have a chocolate base covered with a layer of sweetened cream cheese and a chocolate pecan streusel topping.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups confectioners sugar sifted
  • 1/2 cup unsweetened cocoa powder sifted
  • 1/4 teaspoon salt
  • 1 cup cold unsalted butter diced
  • 8 ounces cream cheese at room temperature
  • 14 ounces sweetened condensed milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 cup chopped pecans

Instructions

  1. Preheat oven to 350 degrees F.
  2. Add flour, sugar, cocoa, and salt to the bowl of a food processor fitted with a knife blade. Pulse to combine.
  3. Add the diced butter. Pulse until it resembles coarse crumbs (mixture will be dry).
  4. Reserve 2 cups of the crumb mixture in a bowl to be used for the topping.
  5. Pour the remaining crumb mixture into a 9- X 13-inch baking pan, spread evenly, and firmly press down.
  6. Bake the crust for 15 minutes.
  7. Beat cream cheese until fluffy. Add condensed milk, egg, and vanilla. Beat until smooth. Pour over warm baked crust.
  8. Stir pecans into the reserved crumb mixture. Sprinkle evenly over cream cheese mixture.
  9. Return the pan to the oven and bake 25 minutes or until bubbly.
  10. Cool completely on a wire rack then refrigerate for at least 2 hours.
  11. Slice into bars or squares. Store covered in the refrigerator.
