There we were standing at the bus stop. We waited and waited and finally the bus arrived. The driver asked us if we were going to the elementary school. Nope, we were excited to be going to what was then called “Junior High”. The driver said our street was no longer in the zone for the school we thought. So the bus drove off and left us standing there. We called our parents and hours later we finally were settled in the other school. And so my back to school day memories that year are filled with being left behind, discovering new things, and being confused about it all. These were the thoughts I had when making this Apricot Dip. It brought me back to a time long ago and a day I will not forget.

The first day of school was always a big day. The weeks prior were spent shopping for clothes and supplies. I would be just as excited over a new notebook as I would with a sweater or jeans. My weakness for office supplies surfaced early. Still today I could browse through an office supply store for hours. However, a lot of my time spent shopping these days is at grocery and housewares stores. Such is the life of a food blogger.

Apricot dip with fresh fruit is great for an after school snack. It certainly was my mid-afternoon snack after taking the photos. I almost devoured half of what you see on the platter. The dip is creamy from Greek yogurt, sweetened with apricot preserves, and given some extra flavor and texture with coconut and walnuts. Pecans would work nicely too. Oh, and another great back to school snack is Honey Oat Bars.

Apricot Dip

Apricot dip served is fresh fruit is a great appetizer or after school snack. It's made with Greek yogurt, apricot preserves, coconut, and walnuts.

Ingredients

  • 1 cup plain Greek yogurt
  • 3/4 cup apricot preserves
  • 1/2 cup sweetened coconut flakes
  • 1/3 cup toasted finely chopped walnuts

Instructions

  1. Stir together all ingredients and chill for at least 1 hour. Serve with fresh fruit.

It's a great combo and I'm going to use it again in more things. I can see muffins and cakes with the same flavor combo.

Is there anything fuller with promise than a freshly sharpened pencil, eraser still clean and pink, and a blank notebook? Even now, those thrill me, just like they did when I was a child. New school supplies were what made starting school again worthwhile, especially those times when first day of school also meant being the new kid.

I often served my girls apple slices to dip in sweetened yogurt for their after school snack, Renee, but I never thought to add jam or nuts. This looks truly scrumptious!

My bus always showed up early, and no matter how early I left for the bus-stop I was usually hot-footing it with 10 pounds of books.

I've never had apricot dip, sounds scrumptious!
