What is your favorite spice? Cinnamon is at the top of my list when it comes to baking. I absolutely love the smell and taste of it. One of the best parts is they way it fills the house with a warm and comforting aroma. You walk in the door and feel like the air is giving you a hug. The scent wraps around you and all seems well.

Spices take food to a different level. Plain and tasteless turn to flavorful with the addition of spice. Some are associated with sweet and others with savory. Cinnamon is most used in sweets although I will add it to savory foods like chili. A small amount gives a subtle flavor enhancement.

Cinnamon is the highlight of this bundt cake. It also has oats and pecans which go so well with it. It is the first time I have baked a cake with applesauce. I have seen many recipes lately with it and they mention how it makes cakes moist. I agree with that now. There is a slight apple flavor which only adds to this cake. How good is it? Well, let’s just say that after I sampled it I could not wait for the next slice. I had it for breakfast the next day. It was not a petite little slice either. Did I mention it has oats?

Cinnamon Crown Bundt Cake

A recipe for a bundt cake made with cinnamon, oats, nuts, and applesauce. The batter is divided and the vanilla portion bakes to form a crown over the cinnamon portion.

Ingredients

  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter 2 sticks, at room temperature
  • 2 cups sugar
  • 3 eggs at room temperature
  • 3 teaspoons vanilla
  • 1 cup milk at room temperature
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup quick-cooking oats
  • 1/2 cup firmly packed brown sugar
  • 2 teaspoons cinnamon
  • 1/2 cup applesauce
  • Confectioners sugar optional

Instructions

  1. Preheat the oven to 350 degrees F. Grease and flour a 10 or 12 cup Bundt pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat butter and sugar using an electric mixer on high speed until light and fluffy. Add the eggs one at a time, beating well after each. Add the vanilla and beat to combine. Alternatively add the flour and milk, beginning and ending with the flour, mixing after each addition until combined. Do not over-mix. Pour half of the batter into the bundt pan.
  4. In a bowl, stir together the nuts, oats, brown sugar, cinnamon, and applesauce. Add the mixture to the remaining half of the batter and stir to combine. Pour the batter into the bundt pan.
  5. Bake 55 to 65 minutes until a toothpick or cake tester inserted in the center comes out clean. Cook cake in the pan for 15 minutes. Invert to remove cake onto a cooling rack. Cool completely. Dust with confectioners sugar if desired. Transfer to a serving plate, slice, and enjoy!

Just beautiful! I like the two batters. I often use applesauce in my cakes, it keeps them moist and adds a nice subtle flavor.
